The beauty of a charcoal grill is its simplicity. A good charcoal BBQ has a special grate for the charcoal. The cooking grill is positioned above the charcoal and a lid with air vents is placed on top. Simple and straightforward.

The indirect method is similar to roasting. The charcoal is arranged evenly on either side of the charcoal grate and a drip pan is placed in the centre. When the lid is closed, the heat rises and circulates around the food, much like in a convection oven. This method is used for foods that require 25 minutes or more of grilling time, such as turkey, roulades, ham hocks, but also cakes and bread.

The direct method is similar to broiling: the food is placed over the charcoal. This method is used for foods that take less than 25 minutes to cook, such as sausages, kebabs, vegetables, fish …

Of course, everything depends on the quality. Briquettes release less ash and you can keep any remaining briquettes for your next BBQ by closing all the vents to extinguish the briquettes.

Chimney starter instructions

  1. Fill the Weber chimney starter with briquettes or charcoal. Place 2 to 3 lighter cubes on the cooking grate, light them and place the chimney starter on top.
  2. After about 30 minutes (for briquettes) or 15 to 20 minutes (for charcoal), the contents of the cimney starter will be covered in a grey ash layer and you can transfer the content on to the charcoal grate or briquette holder.
  3. The Weber chimney starter ensures your briquettes or charcoal heat up very quickly and achieves the best possible temperature.
